"watch" isn't a very good match for 收视 because

1) "watch" is transitive and 收视 isn't. (See the note in Guifan Cidian's definition.)

2) the scope of "watch" is much wider than that of 收视. (For example, 收视 can't be used to express "watch the sun go down".)

Other relevant entries in ABC (Note that 收听 is "listen to the radio", not just "listen".)

收听[-聽] shōutīng* {E} v. listen to the radio

收视率[-視-] shōushìlǜ {E} n. (TV/etc.) viewing rate

Examples of usage:

有線電視的收視費，可能很快就要調漲了。 cable TV charges would increase rapidly [source: Taiwan Panorama]
