"coconut milk" is ambiguous and usually refers to something different from 椰子汁. Here is the Merriam-Webster definition:
1 : a thick, white, milky liquid extracted from grated coconut after it has been soaked in boiling water
2 : coconut water
I think the first sense is easily the more common usage of 'coconut milk". However, 椰子汁 refers to the 2nd sense (coconut water). Some evidence:
