The explanation is uncertain. According to 王宏源, 者 was the original form of 煮 zhǔ ‘cook’, and depicted food being placed in a pot.

The Shuōwén Seal form of 者(􀦅) zhě (gram. funct.) combines 白(􀦂𪞶) zì (variant of 自), with 𣥐(􁉺) lǚ (variant of 旅) (phonetic).
Apparently originally had nothing to do with 老 lǎo ‘old’; nevertheless, following the standard of the 康熙字典, Wenlin lists 者 under the radical 老. The bottom is sometimes written with 白 (bái) instead of 日 (), and 说文解字 lists 者 under the radical 白.

In Shuōwén 者 is listed under radical 白(􀦂𪞶) zì (#104), which is an old variant of 自(􀥿𦣹) zì ‘nose’, not to be confused with 白(􁔹) bái ‘white’ (#284); in variant forms the dot on top of 白 moves to the right to make room for the top component 耂, and in the common modern form the dot has disappeared completely, so that 白 looks like 日 rì.

In the common modern form, the top of 者 looks similar to 老(􁜅) lǎo ‘old’, and so it is listed under that Kāngxī radical today.

According to 王宏源, 者 was the original form of 煮(􀟯煑) zhǔ ‘cook’, and depicted food (or in one graph, a bird) being placed in a pot (cf. 曾/甑 ‘pot/steamer’, said to depict a similar pot).

Compare: 耆(􁜈) qí ‘old man’.
